From the 1st January 2006, all retail butchers will be subject to the new EC hygiene regulations that apply to all other retail and catering businesses. A Butchers licence is, therefore, no longer required and Butchers will be part of the normal Food Safety inspection process.
The EC hygiene regulations contain very similar HACCP requirements to the previous butchers licence scheme, therefore butchers must continue to operate current HACCP systems. Butchers wanting to sell raw meat and ready-to-eat foods for the first time must also ensure that they have a HACCP system in place.
